- 2 eggs
- 2/3 cup sugar
- 4 tbsp pineapple juice
- 2/3 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup butter
- 2/3 cup brown sugar
- 1 can pineapple rings
- Maraschino cherries
- Preheat oven to 350 degrees.
- Spray muffin pan with non-stick cooking spray.
- In a mixing bowl, add eggs, sugar and pineapple juice and beat for two minutes.
- In a separate bowl, sift together the flour, baking powder and salt.
- Add the dry mixture to the wet mixture and beat for two minutes.
- In a small sauce pan, melt the butter and add in the brown sugar and stir on low heat for one minute.
- Spoon a layer of the warm brown sugar mixture into the bottom of each muffin tin.
- Place a pineapple ring in each muffin tin and place a cherry in the center.
- Pour cake mixture in each tin filling about 3/4 of the way full.
- Bake at 350 degrees for 10 to 15 minutes.
