Banana Bourbon Bread Pudding

Ingredients:

  • 1 large loaf bread cubbed
  • 10 eggs
  • 2 cups light brown sugar, divided
  • 1-3/4 cups heavy cream
  • 1/4 cup bourbon or whiskey
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch kosher salt
  • 5 bananas halved lengthwise
  • 2 tbsp salted butter, diced
  • Sea salt for serving
  • Whipped cream or ice cream for serving

Heat oven to 350 degrees. Arrange bread cubes in an even layer on a sheet pan and bake for 15 minutes. Remove from oven and cool for 30 minutes. Transfer to a 4-quart baking dish. Whisk the eggs in a medium mixing bowl. Add 1 cup of the brown sugar, cream, bourbon, spices and salt. Whisk until completely combined. Pour mixture over the bread to evenly coat. Maple Peach Cobbler

Filling:

  • 2 pounds frozen pealed peach slices
  • 1/2 cup granulated sugar
  • 1/2 cup maple syrup
  • 1/4 tbsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 tbsp all-purpose floor
  • Whipped cream

Heat oven to 400 degrees. Combine ingredients in large bowl. Transfer to a 2-quart baking dish and bake for 45 minutes until peaches are soft (but not falling apart) and a thick, sticky sauce has formed. Remove from oven, and cool to room temperature.

Biscuits:

  • 3-1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tbsp baking powder
  • 1tsp fine sea salt
  • 1 cup cold unsalted butter (cut into 1/4″ pieces)
  • 3/4 cup heavy cream
  • 1/2 cup buttermilk

Cilantro-Lime Salad Dressing

Ingredients:

1 cup loosely packed cilantro, stems removed

1/2 avocado

Juice of one lime

2 cloves of garlic

1/4 cup olive oil

1-1/2 tsp white wine vinegar

1/8 tsp salt

2 tsp honey

 

Directions:

Puree all ingredients in a food processor

Taste and adjust seasoning as needed

Spaghetti with Marinated Tomatoes and Mozzarella

Ingredients

8 ounces thin spaghetti
Mouthwatering Marinated Tomatoes
1/2 cup small mozzarella balls

Olives

 

Preparation

Cook spaghetti according to package directions; drain and return to pot. Spoon in Mouthwatering Marinated Tomatoes and desired amount of vinaigrette; add mozzarella balls. Serve immediately.

Hummingbird Cake

3 Cups flour

2 cups Sugar

1 tsp. Salt

1 tsp. Baking Soda

1 tsp. Cinnamon

Mix these ingredients together.

Add in:

3 Large Eggs

1.5 cups of Vegetable Oil

Mix.

Add in:

1.5 tsp. Vanilla

2 Cups Chopped Banana

1 Can Crushed Pineapple

1 Cup Chopped Pecans

Mix

Spread mixture into 3 round cake pans and bake at 350 degrees for 30 minutes

 

 

Icing:

8 oz cream cheese

1 Cup Butter

Beat well.

Add in:

16 oz Powdered Sugar

2 tsp. Vanilla Extract

Beat well.

 

 

Cool cakes.

Then layer cakes with frosting between layers and over the entire cake.

Sprinkle chopped pecans on top.

Strawberry Chocolate Cake

Ingredients

For Chocolate Cake:
1 cup sugar

3/4 cup + 2 tablespoons all-purpose flour

1/4 cup + 2 tablespoons cocoa

3/4 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1 egg

1/2 cup milk

1/4 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup boiling water

 

For Chocolate Mousse:
6 Tablespoons unsalted butter

12 oz. high-quality semisweet chocolate(chopped)

3.5 oz.white chocolate(chopped)

1 3/4 cups heavy whipping cream

2/3 cup powdered sugar

1 1/2 teaspoons vanilla extract

2 teaspoons unflavored gelatin

2.5 Tablespoons cool water

2 quarts strawberries ( try to find small strawberries)

 

For Chocolate Ganache:
2/3 cup heavy cream

5.5 oz. semisweet chocolate( chopped)

 

For Chocolate Curls:
3.5 oz. semisweet baking chocolate

1 tablespoon vegetable shortening (or vegetable oil)
